The Caramel Baby Turns ONE // Recipe :: Low Sugar Sweet Potato Carrot Cake!

It’s true, my baby is 1. I didn’t cry, whimpered maybe, but leading up to the week, there were real sniffs of oh my gosh, remember when. Remember when he squeaked, remember we brought him home and sang him baby burrito songs so he would sleep, remember when he smiled for the first time, remember when he slept on my chest every night for 5.5 months? The Caramel Baby Turns ONE Now you crawl, stand, cruise, say mama, dada, nenenenene, bababababa and you snuggle up on my chest and look up with so much love in your eyes and it’s perfection in it’s truest form! Currently, we’re playing peek-a-boo with you in your walker, and me at the table, using the laptop. It’s these moments that I need to rush and type this so we can resume our fun games that make you squeal in delight!!!

I’ve chronicled some of our challenges on Instagram.. little sleep, lots of night cluster feedings, zero eating big boy foods and lots of hours, if you tally it … 900 hrs pumping “your milky” over the past year {yup…Medela and I are bff}. With your eating challenges, maybe there’s some actual anatomy issue…ENT will help us unearth one if it exists, or you’re just stubborn and love your milky, which given your parents, this could be true. Or perhaps this is one of many challenges that sets the tone for how we parent. Guiding, encouraging and patient as you learn this world of food that we so love!

Regardless, for your FIRST birthday I made you cake. I knew you wouldn’t eat it…but WE deserved cake. Not just any cake, a cake I hope you learn to love. The year we started our business {2010}, we were honestly broke, coming off a pretty tough year {job stuff, personal loss stuff, relocation stuff – just heavy stuff} as a young married couple, but yet, he still splurged and snagged me a box of chocolate covered caramels. The Caramel Baby :: Ruby Love Baby Book

Have you ever felt like you’re behind the curve? Perhaps everyone else is so prepared and you walked into conference and forgot your pen, paper, name tag, etc. Yeah, so that’s pretty much how pregnancy has gone for me. We’re thrilled we’re expecting. We’re over the moon about this little guy. And I enjoy and don’t take for granted any part of “growing him.” But when it comes to prepping for baby by way of purchasing things, reading books on how-to, or even clearing a space for the kiddo, I’m WAY behind. For instance, we’re due in 2 weeks and the car seat is sitting upstairs, bag isn’t packed for me or him, or husband and we still have zero idea of where our pups are going while I’m in the hospital. NBD.

It’s ok, I feel like what we lack in being prepared we’ll make up in snuggles, kisses and lots of love and laughter as we muddle our way through his first few weeks of life. See, we’re optimists!!!

One “thing” that I realized I didn’t have was his baby book! We were meeting with our Doula and she mentioned, if you have a page from your “baby book” that you want his little paw prints on, you should bring it with you to the hospital. I was yeah. I’ll get right on that. Baby book. Baby book. How could I forget that! One frantic search later, I came across Ruby Love on Etsy! Hello!

The Caramel Girl Eats :: Recipe Martha Stewart Chewy Molasses Cookies

As I near the end of my pregnancy journey, I will admit, yes, there have been cravings. There was pie. Oh god, was there pie {French Silk pie…um yeah}. There was salsa, chips, and cheese. The desire for fried chicken, you’d think I lived in the south. I tried to eat healthy, and give my body what it needed to grow this little guy but no one is perfect and I indulged.

Indulgences weren’t too often, nor too much, but there was a night at Red Robin that we just won’t talk about. Let’s just say, my Husband was in shock. lol

One day, I was craving pie and yet I felt like I should diversify my babe’s sweet tooth so that he likes what I like and husband likes…so I made one of my all time favorite recipes Soft & Chewy Molasses Cookies by Martha Stewart.

We devoured the plate of mini cookies in 2 days. No shame.

Friends, let me tell ya, this recipe works every time! Delicious, soft and chewy molasses cookies. Trust me, you’ll feel like you’ve just slid into a pile of gooey molasses heaven! I dare you not to finish these in a day or two. They are THAT GOOD! Give them a try and let me know what you think!

Chewy Molasses & Spice Cookies
Chewy Molasses Cookies - recipe works each and every time!

2 cups all-purpose flour (spooned and leveled)
1 1/2 teaspoons baking soda
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/2 teaspoon salt
1 1/2 cups sugar
3/4 cup (1 1/2 sticks) unsalted butter, softened
1 large egg
1/4 cup molasses
Step 1
Preheat oven to 350 degrees. In a medium bowl, whisk together flour, baking soda, cinnamon, nutmeg, and salt. In a shallow bowl, place 1/2 cup sugar; set aside.
Step 2
With an electric mixer, beat butter and remaining cup of sugar until combined. Beat in egg and then molasses until combined. Reduce speed to low; gradually mix in dry ingredients, just until a dough forms.
Step 3
Pinch off and roll dough into balls, each equal to 1 tablespoon. Roll balls in reserved sugar to coat.
Step 4
Arrange balls on baking sheets, about 3 inches apart. Bake, one sheet at a time, until edges of cookies are just firm, 10 to 15 minutes (cookies can be baked two sheets at a time, but they will not crackle uniformly). Cool 1 minute on baking sheets; transfer to racks to cool completely.
Store in an airtight container up to 4 days.

Oh Baby! :: Has never been so relevant…

So here it is…the news that has rocked our world since the end of May. After some trying…freaking out about my age and some help from modern medicine…this Caramel Girl is having a baby! A BABY!!!!

Um, yes, it’s true {words I’ve said to my husband more than once in the last 4 months}. We’ve been debating starting a family for over 9 years. It has been a long journey of dinner time discussions, enjoying our couple life, traveling to exotic locations, playing with our bears {pups} and more deliberation. Do we have what it takes to be amazing parents? Are we ready? Is this the right time? Daycare? Nanny? Stay at home Mommy? Ahem….student loans from {3} private post graduate degrees? What about that dream house? College fund? Hello, this kiddo is gonna be biracial…oh, and um, hi, what about that booming caramel business???

Turns out, we’re in. We’re ready. Let’s do it!

So come 2014, we’re bracing ourselves for a BABY!!!

How the heck did we share this incredible news?? We took a more traditional way of announcing our pregnancy instead of sharing on social media given my husband is pretty darn private. We phoned, Facetimed and texted our immediate family and sent these precious “Oh Baby 2014″ note cards to our extended family and closest friends. These cards were custom designed by the lovely Courtney Talbot and will forever hold a sweet place in our hearts! To write a little note to friends and family about our exciting news made us feel like it was our little secret and those closest to us were able to hear the news first! Trust me, I NEVER send snail mail, but this time, it just felt like the thing to do!

As always, you can see snippets of my behind the scenes life on Instagram {@thecarameljar} and all the cute baby stuff I dream about on Pinterest. Most of the uber private stuff never makes it online, but I promise there will be a few tidbits that I’ll divulge and perhaps a bump or two.
